Cherry tomato and Carrot salad in Honey Basil Vinaigrette


Basil makes this dressing wonderful with fresh tomato carrot salads


 Ingredients

5 medium size carrot
2 medium cucumber
8-10 cherry tomato
a bunch of Lettuce


for Honey Basil Vinaigrette     
  • 2 tsp honey
  • 1 tsp mustard sauce
  • 4 tsp water
  • 2 tsp balsamic vinegar
  • 4 teaspoons extra virgin olive oil
  • salt according to taste
  • 1/2 teaspoon fresh ground black pepper
  • 1 tablespoon finely chopped fresh basil or dried basil herb


Method


  • Whisk first 7 ingredients in small bowl. Add basil and keep it aside
  • cur cucumber and carrot in round shape or your desired shape
  • cut cherry tomato in half
  • chop Lettuce finely
  • mix all vegetable table in big bowl.
  • add Honey Basil Vinaigrette and mix well.
  • refrigerate this for 15-20 minute.
  • serve chilled

Vegetable puff

Vegetable Puff- Mixed vegetable inside wheat and corn cover.


Ingredients

1 cup cabbage

1/4 cup capsicum chopped
1/4 cup beans chopped
1/4 cup carrot chopped
1 onion chopped

1 cup whole wheat flour
1/2 cup plain flour
1/4 cup corn flour
1 tps oil
salt according to taste



1. mix all flours in a vessel. add salt and oil.

2. add water and kneed a medium soft dough. keep it for 30-45 minutes

3. heat 2 tps oil in a pan.

4. add onion and saute till onion will change colour

5. add all vegetables pan.mix well. close the lid of pan . and let it cook for 5-7 minutes


6. now add red chilly powder, garam masala and salt. mix well. let it cook for another 3-4 minutes.

7. let the vegetable cool for some time.

8. now take a lemon size dough and make a medium thick roti.


9 put small portion of vegetable in center. fold all corners and keep it aside. do the same with all puffs.


10. heat oil in  a pan. fry on slow heat till it is golden brown from both side.

11. Soak excess oil with tissue  paper or kitchen towel .serve hot.

Gobhi matar pasta (cauliflower and peas Pasta)

This pasta is creation of my husband. He wanted to cook some pasta for me on Valentines day. Its more than 2 weeks crossed but still it is one of the most romantic gift for me. He brought so many things that he  want to add in pasta without telling me. I wanted to share this special pasta on my blog :). I helped him a little, but whole Idea was came from his mind.

Its winters in India, so we used all winter vegetables in the Pasta

INGREDIENTS

1 cup boiled pasta
1/2 cup cauliflower chopped
1/2 cup peas
1/4 cup chopped baby corn
1/4 cup carrots , cut in long pieces
1 onion chopped
1 tomato chopped
2 green chilly cut in vertically

4 tps cheese
2 tps corn flour
1 tps oregano
1 tps black pepper
2 tps chilly sauce
salt according to taste

2 tps olive oil

METHOD

heat oil in pan
add onion , saute till onion will change its color
add cauliflower and peas. mix well. let it cook for 6-7 minute till vegetable cooks
now add tomatoes , mix well. saute for 2 minutes
add grated cheese, oregano, black pepper, oregano, chilly sauce and salt. mix well
mix corn flour in 1/2 cup of water. add it to pan. mix well
let it boil once. now add pasta in the pan.
cook for another 5 minutes
serve hot

fruit salad in tangy honey dressing

This month theme of Innovative salad is Fruits- Apple, pine apple and Strawberry. I want to do something with fruits for this event. This salad can not be said truly innovative but this tangy honey dressing mix with fruits so well. you will surely love it because same flavor mixed with all fruits create a true magic because each fruit has its own taste and mix with this sauce absolutely a lovely treat :)



Ingredient

1 apple chopped
1 cup grape chopped
2 banana chopped
you can include any fruit of your choice

For dressing
3 tps honey
1 tps lemon juice
1 tps chat masala
salt according to taste


Method

mix all ingredient under dressing in a bowl.
chop all fruits in the way you like. I have chopped banana and apple. cup grapes in half
add all fruits in a bowl
add dressing to the bowl.
mix well and refrigerate for 30 minutes
serve chilled

Aate ki Pakaudi

Its a paukodi from UP, more specifically I can say eastern UP. this is my favorite I prefer it more than Besan ki pakaudi. Its so simple to prepare but surely very delicious.

 
Ingredients 
2 cup whole wheat flour
1 onion chopped
1 medium potato chopped
2 green chilly chopped
1 tps jeera
1/2 tps red chilly
salt according to taste
water as needed
oil to fry

Method

1. in a bowl add wheat. now add salt, jeera , red chilly. mix well

2. add chopped onion, potato and green chilly.

3. add water and make medium tick batter.

4. heat oil in a pan. keep it on medium heat
 

5. take little batter in hand or in spoon drop into oil. add 5-6 pakaudi at a time.

6. fry it till it will turn golden brown.

7. serve hot with green chutney or sauce of your choice

Its a second month I am hosting Innovative salad Event, Last month theme Ingredient was Cucumber , I have received more than 20 salads in this event. It was really a wonderful experience  to host this event. 

as you know in this event I will provide one ingredient , that need to part of your recipe.
