Vegetable Penne Pasta with Tomato Herb Sauce


I am back to my kitchen after long time. Its harder to find time for cooking now because of baby but still I try to find time for cooking too. I missed cooking for last many month.
This time I made this layered pasta. It turned out really tasty herbs and coriander added really wonder in the dish. It was a nice change and perfect dinner for us

 Ingredients

For Pasta Layer
Penne Pasta 200gm
Olive oil 1tps
Salt according to taste
For Vegetable layer
½ cup mushroom
½ cup carrot
¼  cup beans
¼  cup baby corn
Other vegetable of your choice
1 tps oregano
½ tps thyme
For tomato herb sauce
3 tomatos chopped
1 onion chopped
2 green chilly chopped
8 to 10 clove garlic
1 ½ tps Thyme
½ tps mixed herb
½ tps chilly flakes
Top layer
½ cup chopped coriander
½ cup cheese grated
Method
  • 1.       Boil pasta according to instruction on packet
For Tomato sauce
  • 2.       Heat  2 tbsp of oil in a pan, add chopped garlic and green chilly
  • 3.       Add chopped onion
  • 4.       When onion will change its color, add chopped tomato.
  • 5.       Cook tomatos till it become soft, now add little water
  • 6.       Add thyme and mixed herd.
  • 7.       Let it cook for another 5-7 minutes
For Vegetables Layer
  • 8.       Heat 1 tbsp olive oil in the pan and add onion
  • 9.       Now add all vegetables in the pan
  • 10.   When vegetable are half cooked, add thyme, mixed herb, chilly flakes and salt
  • 11.   Cook for another  5 min
Layering
  • 12.   Take a microwave safe dish
  • 13.   Add panne at bottom. Mix 2 tps olive oil in it
  • 14.   Next make layer of vegetable
  • 15.   Now add tomato sauce on top
  • 16.   Now make a layer of chopped coriander
  • 17.   On the top add  grated cheese
  • 18.   Cook in microwave on High for 5  minute .
19.   Serve hot

Gobhi matar pasta (cauliflower and peas Pasta)

This pasta is creation of my husband. He wanted to cook some pasta for me on Valentines day. Its more than 2 weeks crossed but still it is one of the most romantic gift for me. He brought so many things that he  want to add in pasta without telling me. I wanted to share this special pasta on my blog :). I helped him a little, but whole Idea was came from his mind.

Its winters in India, so we used all winter vegetables in the Pasta

INGREDIENTS

1 cup boiled pasta
1/2 cup cauliflower chopped
1/2 cup peas
1/4 cup chopped baby corn
1/4 cup carrots , cut in long pieces
1 onion chopped
1 tomato chopped
2 green chilly cut in vertically

4 tps cheese
2 tps corn flour
1 tps oregano
1 tps black pepper
2 tps chilly sauce
salt according to taste

2 tps olive oil

METHOD

heat oil in pan
add onion , saute till onion will change its color
add cauliflower and peas. mix well. let it cook for 6-7 minute till vegetable cooks
now add tomatoes , mix well. saute for 2 minutes
add grated cheese, oregano, black pepper, oregano, chilly sauce and salt. mix well
mix corn flour in 1/2 cup of water. add it to pan. mix well
let it boil once. now add pasta in the pan.
cook for another 5 minutes
serve hot

This week I was hosting the Pesto Pasta Nights 201. First time I am hosting this event. Actually this event was a wonderful experience for me. I would like to thank Ruth for giving me this opportunity. I was thinking i will post at least 2 pasta recipe this week. I was able to post one. Multi shape pasta in Tamarind sauce

 This pasta is actually different from all pasta usually I prepare. You can say actually this sauce is different. This sauce is inspired by the Thai pad noodle sauce. which uses this type of sauce.

This week I am hosting Pesto Pasta Night #201. This pasta recipe goes to this event
Ingredients
1 1/2 cup pasta of different shapes
1 onion chopped
1 cup mixed chopped vegetable(broccoli, carrot, spring onion, beans etc)
10 garlic clove chopped
1 tps chilly sauce
salt according to taste
olive oil

for tamarind sauce
1  tps soy sauce
1 tps tamarind paste
1 tps brown sugar
1 tps mixed herbs
1 tps oregano
2 tps water
method

for sauce mix soy sauce, tamarind paste, chilly sauce, brown sugar, salt . add little water and mix well.
heat water in a sauce pan. add little water and salt. add pastas of different shapes in that and let it boil for 3-4 minutes until pasta is cooked properly. drain the water and keep it aside.

heat oil in a pan. add all chopped veg in the pan . and saute for 3  minutes.

add sauce mix in the pan. mix well.

add pasta in the pan and mix well.

add oregano, mixed herbs and salt if required. mix it and saute for few more minutes.

serve hot

Rice Pasta and Noodle Medley in Tomato Sauce

Its recipe inspired by Rice Lentils and Pasta Medley from the Lebanese Cooking from Nita Mehta. I have changed a little. This recipe was really nice. I would surely cook it again again.

Ingredients

1 1/2 cup rice
2 tps olive oil
1/2 tps black pepper
1/2 tps red chilly powder
salt

1/2 cup macaroni
1/2 cup boiler noodles

For sauce
3 tomatoes large chopped
1 medium onion chopped
5-6 garlic clove chopped
1/2 tps chilly flakes
1/2 tps black pepper
1 tps oregano
salt according to taste
2 tps vinegar
2 tps oil


Method

1. in a microwave safe bowl, add rice, olive oil, black pepper and red chilly powder and salt.
2 add enough water and let it cook for 10-12 minutes on high

3. Boil macaroni and noodles. add salt , and little oil in water.
4. when boiled , drain the water. wash it and keep it aside.

For sauce

5. heat oil in pan. add onion, cook till it will change color.
6. add garlic, saute for 1 minutes.
7. now add tomatoes, red chilly, black pepper powder, oregano, salt and mix well.
8. let it cook for another 5 minutes.
9. add water and vinegar. close the lid for pan. let it cook for another 7-8 minutes. stirr in between

10. take a microwave safe bowl. spread pasta and noodle at bottom.
11. Spread a layer of sauce on it.
12. now spread a layer of cooked rice.
13 now spread all left sauce on it.
14 spread another layer of fried onion (optional)
15. cook in microwave for 2 minutes.
16. Serve Hot

Crispy Vegetables & Spaghetti in Hot and Sweet Tomato Sauce

Yesterday night we was not in mood of having something usual. I have decide to cook something Chinese. I had some Red and yellow Capsicum, also some broccoli. I have decided to do something with that. Only vegetables can not make complete meal o added some Spaghetti also. At the end it was looking so good and taste also Yummy.

Ingredients
1 broccoli
1 medium yellow capsicum
1 medium Red capsicum
1 large onion.
2 tps Oil
Salt according to taste
1/2 tps Chilly flakes
a pinch of azinomoto (Optional)
For sauce
3 Medium Tomatoes
10-12 clove garlic chopped
1 tps oregano
1/2 tps black pepper
1/2 cup tomato sauce
1/2 cup cornflour
1 tps sugar
2 tps oil

Method
 For Vegetable

  1. add little oil in the pan
  2. now add onion cut into large pieces
  3. when onion will become pink add vegetables .
  4. add salt, chilly flakes and azinomoto (I like to add it because it give a Chinese taste. If you don't like you can remove it)
  5. Cook vegetable for 5 more minutes. 2-3 minute on high Flame to make them Crispy
For Sauce
  1. boil water add spaghetti , salt and little oil.
  2. Cook it and keep it aside.
  3. make tomato puree from tomatoes.
  4. add 2 tps oil in pan, add chopped garlic and cook till it will be light brown in colour.
  5. now add tomato puree.
  6. cook till it has a boil. now add salt, oregano, tomato sauce and black paper into that.
  7. let it cook for one minute
  8. when it has a boil, mix corn flour in the water and add it to sauce.let it cook for 2 minutes\
  9. Now add spaghetti into sauce and cook for another 3-4 minutes.
  10. Serve hot , firstly add sauce with spaghetti in the plate. On the top add vegetables.
  11. spaghetti with crispy vegetable taste really good

SpinachChicken Pasta Salad




Ingredents
2 cups cooked bow tie pasta, cooled
1 bunch spinach
4 boneless skinless chicken breast halves, grilled and cut into strips
1 large ripe tomato chopped
1 cup sliced halved cucumbers
1 cup cheese - divided use
1/2 cup mayonease


Method
1. Toss pasta with spinach, chicken, tomatoes, cucumbers and 1/2 cup of the cheese in large bowl.
2. Add dressing; mix lightly.
3. Sprinkle with remaining 1/2 cup cheese.

Spicy Spaghetti


Preparation Time : 10 Minutes
Cooking Time : 20 Minutes
Serves / Makes : 4 Persons

Ingredients

100 gm Spaghetti
4 tps oil
salt according to taste
1 cup of chicken stock
2 tps butter
2 tps flour
1tps cheese
1/4 tps cumin nutmeg
1/4 tps mace
1tps red chilli powder
1 tps coriander seeds
1/2 tps pepper cones
green coriander (finely chopped)

Method

1. Boil the spaghetti with oil and salt and drain when cooked
2. Roast and grind all the spices
3. Make a sauce with the chicken stock by adding butter and flour to the chicken stock
4.add roasted spices
5.pour on the spaghetti grate cheese
6.Put in the Oven till the cheese melts
7 sprinkle coriander on the Pasta and serve hot

Pasta with tomato,peas n paper Sauce


Cooking Time : 15 min.

Preparation Time : 10 min.

Serves : 2

Ingredients

1 Cup pasta

3 Medium Tomato
1/2 tps. olive or vegetable oil
1 clove garlic, thinly sliced

1/4 tps paper

1/2 cup peas (Frozen or Fresh)

1/3 cup diced roasted red peppers

1/2 tsp. dried basil 3 tbsp. grated cheese

Method

1. Boil the pasta with salt.

2. Place tomatoes in a blender or food processor and blend until very smooth and light pink, about 1 minute. Set aside.

3. Heat the oil in a large pan over medium heat.

4. Add the garlic and red pepper flakes and saute for 30 seconds.

5. Add the peas, roasted red peppers and basil and stir 1 minute.

6. Add the pureed tomatoes and heat just to boiling. Remove sauce from heat.

7. Drain the pasta and transfer to pan. Stir over medium heat until pasta is well mixed with sauce

8. Sprinkle with grated Parmesan cheese and serve immediately.
