An Angel arrived in my Life

I was not so active from last few months. I am going to disclose the reason today. I was pregnant. On 1st of December I am blessed with an angle like daughter, Parnika. Being a mother is such a beautiful feeling you cannot describe in word. Your day and night belong to your child, but there is no tiredness or complaint in your mind. Doing work for your child really give a new level of satisfaction. 


Next few months will be similarly busy for me. I want to share my pregnancy experience with you all. I will write an article  on my  pregnancy experience , especially the diet I was following for healthy pregnancy. Everyone’s pregnancy is different but a healthy diet helps you in getting a healthy pregnancy and a healthy child.

Hot and Sweet Lotus Root and Baby Corn

I used to not like lotus stem a lot. But after prepared in this form I actually loving it. may be in I will try more recipes with lotus root.



Ingredients

250 gm Lotus root

8-10 baby corn

1 onion thin sliced

1 capsicum thin sliced

½ cup tomato sauce

3 tps chilly sauce

1 tps chilly flakes

2 tps honey

Salt according to taste

4 tbsp Corn flour

Oil to fry


Method

  1. Cut lotus stem into long pieces and pressure cook for 1 or 2 vessels   
  2. Cool lotus stem and Cut lotus stems into thin diagonal slices and put them in a bowl
  3. Add 2 table spoon corn flour and salt in the lotus stem. Mix well.
  4. Fry lotus Stem in sufficient oil.
  5. Heat little oil in the pan.  Add onion and cook till it change color.
  6. Now add capsicum and baby corn. Stir till both are cooked
  7. Now add fried lotus stem. Mix well.
  8. Add tomato sauce, chilly sauce, chilly flakes , Honey ,  salt and mix well.
  9. Mix remaining corn flour in 1 cup water. Add this mixture to pan.
  10. Cook for another 5 minutes.
  11. Serve hot with rice or chapati

    Black chickpeas Hot Dog

    Again I am posting after long time. Its not that I am cooking these days but I am not getting time to post them. Today I made a healthy vegetarian version of hot dog. Because of chickpeas used in the hot dog it is high in Protein.



    Ingredients

    4 hot dog bun

    For Cutlet

    1 cup Black Chickpeas(Kala) chana
    2 boiled potato
    1 onion chopped
    2 green chilly chopped
    4-5 garlic clove
    1 tbs chilly flaks
    1 tbs garam masala
    salt according to taste
    1/4 cup cornflour
    1 cup breadcrumbs

    To serve
    4 tbsp tomato sauce
    4 tbsp mustard sauce
    1 onion chopped
    butter



    Method

    1 . Soak black chickpeas for 3-4 hours and then boil them with 4-5 garlic cloves
    2. cool the black chickpeas and put in a grinder and grind it.
    3. Transfer mixer to a bowl.
    4. add chopped onion , green chilly, red chilly, chilliflaks, potato and corn flour. mix well
    5. shape black chickpeas mixture into cylindrical shaped cutlet .Dip in milk and roll in breadcrumbs. Keep them in the refrigerator for an hour or more
    6. Put little oil on a nonstick pan. Cook cutlet from each side till all sides are brown and crispy.

    7. Cut hot dog bun in such a way, so that one side should be attached .
    8. spread butter on both side of bun.
    9. spread mustard sauce on one side and tomato sauce on one side.
    10. Place one table spoon of onion mixture in the bun and place one cutlet in each one.
    11. you can add some more sauce on the top of cutlet.
    12. Serve hot

    Health Benefits of Garlic

    Garlic is my all-time favorite flavor to add to any cuisine whether Indian, Chinese , Italian or any other cuisine. Best thing about garlic is , its not only flavorful but it also contain a number of health benefits. Like one I remember. My husband’s 
    bad cholesterol came a little high. So my Mother in law recommended few garlic cloves in morning before breakfast.


    Garlic is has lot more such properties. If you enjoy garlic in your meals its only a good sign for you.


    Cardiovascular Health and High Cholesterol 
    There are two types of Cholesterol, Good and Bad. Problem starts when your bad cholesterol is higher then the good cholesterol. . Modern medicine has found that garlic contains allicin which scavenges hydroxyl radicals (OH). This is turn is thought to prevent LDLs from being oxidised. In simple language, It helps in reducing Bad cholesterol. If you have problems with high cholesterol go ahead and take some garlic. Fresh or cooked garlic or 500 mg garlic capsules twice daily helps in lowers down the blood pressure & cardiovascular problems. I
    Antioxidant 
    Allicin found in Galric, naturally increases antioxidant enzymes like Atalase and Glutathione Peroxidase in your blood. It helps against the damaging effects of nicotine and slows the aging process of your liver by inhibiting lipid peroxidation.
    Anti-Bacterial 
     Garlic has 1% of the potency of penicillin and can ward off a number of bacteria such as Listeria, Salmonella, E. coli, Cryptococcal meningitis, Candida albican and Staphylococcus. The problem with most antibiotics is that bacteria develops resistance to them, however this is not the case with garlic.
    Blood Clots 
    It thins the blood, reduces clotting and helps in controlling blood pressure and poor circulation.
    Improve Digestion
    Garlic works as a cleanser of the digestive system, helps in curing flatulence, kills internal parasites and is an excellent internal antiseptic

    Innovative Salad Event # 2- Fruits Round up

    Last month I have announced the Innovative salad event - fruits. I have received some of really healthy, innovative and tasty salads. I am present salads in the order I have received.

    Cherry tomato and Carrot salad in Honey Basil Vinaigrette


    Basil makes this dressing wonderful with fresh tomato carrot salads


     Ingredients

    5 medium size carrot
    2 medium cucumber
    8-10 cherry tomato
    a bunch of Lettuce


    for Honey Basil Vinaigrette     
    • 2 tsp honey
    • 1 tsp mustard sauce
    • 4 tsp water
    • 2 tsp balsamic vinegar
    • 4 teaspoons extra virgin olive oil
    • salt according to taste
    • 1/2 teaspoon fresh ground black pepper
    • 1 tablespoon finely chopped fresh basil or dried basil herb


    Method


    • Whisk first 7 ingredients in small bowl. Add basil and keep it aside
    • cur cucumber and carrot in round shape or your desired shape
    • cut cherry tomato in half
    • chop Lettuce finely
    • mix all vegetable table in big bowl.
    • add Honey Basil Vinaigrette and mix well.
    • refrigerate this for 15-20 minute.
    • serve chilled

    Vegetable puff

    Vegetable Puff- Mixed vegetable inside wheat and corn cover.


    Ingredients

    1 cup cabbage

    1/4 cup capsicum chopped
    1/4 cup beans chopped
    1/4 cup carrot chopped
    1 onion chopped

    1 cup whole wheat flour
    1/2 cup plain flour
    1/4 cup corn flour
    1 tps oil
    salt according to taste



    1. mix all flours in a vessel. add salt and oil.

    2. add water and kneed a medium soft dough. keep it for 30-45 minutes

    3. heat 2 tps oil in a pan.

    4. add onion and saute till onion will change colour

    5. add all vegetables pan.mix well. close the lid of pan . and let it cook for 5-7 minutes


    6. now add red chilly powder, garam masala and salt. mix well. let it cook for another 3-4 minutes.

    7. let the vegetable cool for some time.

    8. now take a lemon size dough and make a medium thick roti.


    9 put small portion of vegetable in center. fold all corners and keep it aside. do the same with all puffs.


    10. heat oil in  a pan. fry on slow heat till it is golden brown from both side.

    11. Soak excess oil with tissue  paper or kitchen towel .serve hot.
