Multi shape pasta in Tamarind sauce

 This pasta is actually different from all pasta usually I prepare. You can say actually this sauce is different. This sauce is inspired by the Thai pad noodle sauce. which uses this type of sauce.

This week I am hosting Pesto Pasta Night #201. This pasta recipe goes to this event
Ingredients
1 1/2 cup pasta of different shapes
1 onion chopped
1 cup mixed chopped vegetable(broccoli, carrot, spring onion, beans etc)
10 garlic clove chopped
1 tps chilly sauce
salt according to taste
olive oil

for tamarind sauce
1  tps soy sauce
1 tps tamarind paste
1 tps brown sugar
1 tps mixed herbs
1 tps oregano
2 tps water
method

for sauce mix soy sauce, tamarind paste, chilly sauce, brown sugar, salt . add little water and mix well.
heat water in a sauce pan. add little water and salt. add pastas of different shapes in that and let it boil for 3-4 minutes until pasta is cooked properly. drain the water and keep it aside.

heat oil in a pan. add all chopped veg in the pan . and saute for 3  minutes.

add sauce mix in the pan. mix well.

add pasta in the pan and mix well.

add oregano, mixed herbs and salt if required. mix it and saute for few more minutes.

serve hot

Pasta with tomato,peas n paper Sauce


Cooking Time : 15 min.

Preparation Time : 10 min.

Serves : 2

Ingredients

1 Cup pasta

3 Medium Tomato
1/2 tps. olive or vegetable oil
1 clove garlic, thinly sliced

1/4 tps paper

1/2 cup peas (Frozen or Fresh)

1/3 cup diced roasted red peppers

1/2 tsp. dried basil 3 tbsp. grated cheese

Method

1. Boil the pasta with salt.

2. Place tomatoes in a blender or food processor and blend until very smooth and light pink, about 1 minute. Set aside.

3. Heat the oil in a large pan over medium heat.

4. Add the garlic and red pepper flakes and saute for 30 seconds.

5. Add the peas, roasted red peppers and basil and stir 1 minute.

6. Add the pureed tomatoes and heat just to boiling. Remove sauce from heat.

7. Drain the pasta and transfer to pan. Stir over medium heat until pasta is well mixed with sauce

8. Sprinkle with grated Parmesan cheese and serve immediately.
