Black chickpeas Hot Dog

Again I am posting after long time. Its not that I am cooking these days but I am not getting time to post them. Today I made a healthy vegetarian version of hot dog. Because of chickpeas used in the hot dog it is high in Protein.



Ingredients

4 hot dog bun

For Cutlet

1 cup Black Chickpeas(Kala) chana
2 boiled potato
1 onion chopped
2 green chilly chopped
4-5 garlic clove
1 tbs chilly flaks
1 tbs garam masala
salt according to taste
1/4 cup cornflour
1 cup breadcrumbs

To serve
4 tbsp tomato sauce
4 tbsp mustard sauce
1 onion chopped
butter



Method

1 . Soak black chickpeas for 3-4 hours and then boil them with 4-5 garlic cloves
2. cool the black chickpeas and put in a grinder and grind it.
3. Transfer mixer to a bowl.
4. add chopped onion , green chilly, red chilly, chilliflaks, potato and corn flour. mix well
5. shape black chickpeas mixture into cylindrical shaped cutlet .Dip in milk and roll in breadcrumbs. Keep them in the refrigerator for an hour or more
6. Put little oil on a nonstick pan. Cook cutlet from each side till all sides are brown and crispy.

7. Cut hot dog bun in such a way, so that one side should be attached .
8. spread butter on both side of bun.
9. spread mustard sauce on one side and tomato sauce on one side.
10. Place one table spoon of onion mixture in the bun and place one cutlet in each one.
11. you can add some more sauce on the top of cutlet.
12. Serve hot

Open Sandwich with Vegetable and Cheese


Open Sandwich. Just seen on some of the blogs. So I have decided to try something with that. Just added spread and topping of my choice and on top with cheese. Its was really yum yum. I simply love it. It is much like a bread pizza but this time i would love to name it like open sandwich :)




Ingredients
6 slice of French bread
6 tps tomato sauce
3 tps chilly sauce
1 onion chopped
1 small carrot chopped
1 tomato chopped
1 small capsicum chopped
Salt
Black pepper powder
Mozzarella cheese 

Method
1.       Mix tomato sauce and chilly sauce in a bowl
2.       Take a slice of bread. Spread mixture of sauces on the bread
3.       Spread a layer of onion, capsicum, tomato and carrot on the bread
4.       Sparkle a little salt and black pepper
5.       sprinkle with cheese
6.       do the same process with other bread also
7.       put these breads on the microwave safe plate
8.       cook it in microwave on HIGH for 3 minutes
9.       serve hot with sauce of your choice

Mixed Vegetable Poha

    Firstly I would like to wish all friends A Very Happy Republic Day
    It is my attemp for adding some more flavors to simple Aloo Poha. Adding more vegetable makes this light breakfast more heathy and delicious.


1 1/2 cup thick poha
1/4 cup carrot chopped
1/4 cup peas

3-4 french beans chopped
2 onion chopped
1 potato chopped
1 tomato chopped

1 tps turmeric powder
1 tps red chilly
salt according to taste

oil
1 tps mustard seeds
8-10 curry leaves
                                
Method

heat oil in a pan
add mustard seeds and curry leaves.
when curry leaves start changing its color add onion . saute till onion will turn pink.
add potato, peas and carrot and little salt. cover  the pan , cook till veg are almost cooked
add tomato and saute for 1 minute
soak poha in water. Drain the poha completely to remove all water. add poha to the pan.mix well,
add salt, turmeric powder, red chilly powder and mix well.
cook for another 2-3 minutes .
serve hot.

If you want a little twist, spread a little besan sev on the poha on serving plate. it taste really nice

Multigrain cheela

Its a version of tradition cheela. I like it because it includes goodness of all different flours.


2 cup multigrain flour (u can also mix wheat, ragi, besan, corn flour and other flours of your choice)
1 onion finely chopped
1 chilly finely chopped
1/2 bunch coriander leaves chopped
1/4 bunch mint leaves chopped
1 tps red chilly
salt according to taste
oil
water to make batter

Method
  1. Take a vessel , put multigrain flour in it.
  2. add onion, green chilly, coriander leaves, mint leaves, red chilly and salt. mix it.
  3. now add water such that it should not be too thick and not too watery.
  4. take a nonstick pan or dosa tava. Spread it like pan cake or dosa.
  5. let it cook it brown on both side. Add little oil if required
  6. serve hot with chutney of your choice.

Leftover Roti Upma

I had some rotis left in my kitchen. So I tried this and its really nice and good change in our regular breakfast


Ingredients 
3-4 Rotis
1 onion
1 tomatoes
4-5 garlic chopped
1 green chilly chopped
1/2 tps turmeric
1/2 tps red chilly powder
1/2 tps mustard seeds
1/2 tps cumin seeds
1 tps coriander leaves
8-10 curry leaves
salt according to taste
2 tps oil

Method
  1. Heat oil in pan. add cumin seeds, mustard seeds and curry leaves. saute till leaves change its color.
  2. add onion , garlic and green chilly. saute for 2 minutes.
  3. divide rotis into 1" uneven pieces.
  4. mix rotis in the pan.
  5. add turmeric, salt and red chilly. mix well and let it cook for another 5 minutes.
  6. garnish with coriander leaves. serve hot.

    Pav Bhaji

    Home Cooked Pav Bhaji, healthy , tasty and better than market one

     Ingredients
    8 Pav
    3 tps of butter

    1/2 cup chopped gobhi
    1/2 cup peas
    1/4 cup chopped beans
    1/4 cup chopped cabbage
    1/3 cup chopped carrots
    3 medium potatoes boiled
    2 medium tomato chopped
    1 medium onion chopped
    2 tps pav Bhaji masala(you can purchase from market or prepare Pav bhaji Masala)
    1 tps Amachoor
    1 tps red chilly powder
    1 tps cumin seeds
    2 tps oil
    4 tps butter(optional)

    Method
    Heat oil in a pan. add cumin seeds. saute for 30 seconds
    add onion, saute till onion will change color
    add chopped vegetables except patatos and tomatos
    add little salt and mix well. cover the pan saute in between . cook till veg are almost cooked
    now add chopped tomato. saute for 2 minutes.
    now add boiled potatos,little mashed . Mix well
    add 1 cup water, salt , pav bhaji masala, red chilly, amchoor. mix well.
    cook till water will become half. mash the bhaji so that all vegetables will be mixed well.

    Cut the pav in the middle
    add little butter on the heated pan.
    press the pav on the tav till pav wil become crispy

    for serving add bhaji in the plate. add little butter on top. serve with crispy Pav

    Dahi Vada

    Diwali is coming in few days. Dahi Vada is part of our special preparation always. Its a recipe we can eat as snack or serve to guests. Tou can prepare it in the excess and serve as required. I am presenting here my mother's recipe of Dahi Vada, I simply like it a lot. Its really  Soft and very tasty!!!!!



    Ingredients
    1 cup Urad Dal(Split Black Gram)
    2 tps green coriander
    1 tps ginger chopped
    2 tps Raisin cut into half
    salt according to taste
    1 1/2 cup thick Yogurt 
    1 tps cumin powder
    salt according to taste

    Method
    1. Soak black gram dal for 1 hours
    2. Make paste of dals. dont add so much water. Paste should thick
    3. Keep It for 1/2 hours
    4. beat the batter for 8-10 minutes. Take water in bowl. drop one drop of batter in the bowl. If it is not socked in water, the drop should be on the top of water, batter is ready else beat for some more time
    5. add coriander leaves, ginger, kishmish. Add Salt little less than required
    6. Heat the oil.
    7. add little water in your hand. Take batter and with the help of thumb, make a hole in middle.
    8. deep fry it. when it will become brown keep it aside.
    9. Take enough water in the big bowl. Soak Vada in the water for sometime.
    10. Take Dahi, beat it. To remove all lumps
    11. Soak in the dahi.
    12 add salt, cumin powder, chopped coriander leaves and Sweet Chutney(Optional) before serving
